Beef Goulash with Carrots


Ingredients:

  • 800 g beef goulash meat

  • 2 tbsp oil

  • 2 large onions, roughly chopped

  • 3 garlic cloves, chopped

  • 4 large carrots, sliced

  • 2 tbsp paprika powder

  • 1 tbsp tomato paste

  • 500 ml beef broth

  • 200 ml red wine

  • 2 bay leaves

  • Salt and pepper to taste


Preparation:

1. Preparation:

  • Season the beef goulash with salt and pepper.

  • Prepare all ingredients and preheat your cast iron pot on the stove.

2. Sear the meat:

  • Heat oil in the cast iron pot over medium-high heat.

  • Brown the beef in batches until all sides are nicely seared. Remove and set aside.

3. Prepare the vegetables:

  • In the same pot, sauté onions and carrots until lightly browned, about 5–7 minutes.

  • Add garlic and cook for another 1–2 minutes until fragrant.

4. Make the goulash sauce:

  • Stir in tomato paste and paprika powder.

  • Add red wine and deglaze the pot, scraping up any browned bits.

  • Pour in beef broth and add bay leaves.

5. Add meat and simmer:

  • Return the browned beef to the pot.

  • Reduce heat, cover, and let it simmer for about 2 hours until the meat is tender and the sauce has thickened.

6. Serve:

  • Remove the bay leaves and adjust seasoning with salt and pepper.

  • Serve hot with potatoes, noodles, or fresh bread.

This goulash often tastes even better the next day as the flavors develop further. Simply reheat and enjoy!
