Chicken in Tomato Sauce


Ingredients:

  • 4 chicken breast fillets or 4 chicken thighs

  • 2 tbsp olive oil

  • 1 large onion, finely chopped

  • 3 garlic cloves, chopped

  • 1 large can (800 g) chopped tomatoes

  • 200 ml chicken broth

  • 2 tbsp tomato paste

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1 tsp paprika powder

  • Salt and pepper to taste

  • Fresh basil leaves for garnish

  • Optional: 1 tsp sugar (to balance acidity)


Preparation:

1. Preparation:

  • Season the chicken breasts or thighs with salt and pepper.

  • Prepare all ingredients and preheat your cast iron pot on the stove.

2. Sear the chicken:

  • Heat olive oil in the cast iron pot over medium-high heat.

  • Sear the chicken pieces on both sides until golden brown, about 5–7 minutes per side. Remove and set aside.

3. Prepare the vegetables:

  • In the same pot, sauté the chopped onion until translucent, about 3–4 minutes.

  • Add garlic and cook for another 1–2 minutes until fragrant.

4. Make the tomato sauce:

  • Add tomato paste and stir well, letting it lightly toast.

  • Add chopped tomatoes and chicken broth, stirring everything together.

  • Add oregano, basil, and paprika. Season with salt, pepper, and optional sugar.

5. Add chicken and simmer:

  • Return the chicken pieces to the pot.

  • Reduce heat, cover, and let it simmer for about 25–30 minutes until the chicken is cooked through and tender. Stir occasionally to prevent sticking.

6. Serve:

  • Garnish with fresh basil leaves.

  • Serve hot with rice, pasta, or fresh bread.
