Ingredients:

  • 4 chicken breast fillets

  • 2 tbsp olive oil

  • 250 g mushrooms, sliced

  • 1 large onion, finely chopped

  • 3 garlic cloves, chopped

  • 250 ml Marsala wine

  • 200 ml chicken broth

  • 2 tbsp flour

  • Salt and pepper to taste

  • Fresh parsley for garnish


Preparation:

1. Preparation:

  • Lightly coat the chicken breasts with flour and season with salt and pepper.

  • Prepare all ingredients and preheat your cast iron pot on the stove.

2. Sear the chicken:

  • Heat olive oil in the cast iron pot over medium-high heat.

  • Sear the chicken breasts on both sides until golden brown, about 4–5 minutes per side. Remove and set aside.

3. Prepare the vegetables:

  • In the same pot, sauté onions and mushrooms until soft, about 5–7 minutes.

  • Add garlic and cook for another 1–2 minutes until fragrant.

4. Make the Marsala sauce:

  • Pour in the Marsala wine and stir well to deglaze the pan.

  • Add chicken broth and let the sauce gently simmer.

5. Add chicken and simmer:

  • Return the chicken breasts to the pot.

  • Reduce heat, cover, and let everything simmer for about 20–25 minutes until the chicken is cooked through and the sauce thickens.

6. Serve:

  • Garnish with fresh parsley.

  • Serve hot with rice, pasta, or fresh bread.

This dish often tastes even better the next day as the flavors develop further. Simply reheat and enjoy!
